Oops, I missed National Pancake Day
Apparently yesterday was National Pancake Day. I totally missed that one. My kids always love a good pancake, so we’ll still be celebrating this really important holiday, just a day late.

Happy Cinco de Mayo!
It’s the fifth of May, so Happy Cinco de Mayo. There seems to be a common misconception that Cinco de Mayo is Mexico’s Independence Day, but that is September 16. Cinco de Mayo actually commemorates the Mexican victory over the French army.
It is my understanding that Cinco de Mayo is celebrated only regionally in Mexico, however, it is a big holiday in America and an opportunity to celebrate Mexican culture, especially the food an music.
So I thought it would be fitting to mention a few of our favorite Mexican-inspired recipes.
Cereal Treat Bird’s Nests
Remember back in they day when schools still celebrated holidays with a class party and Moms could send homemade treats?
Well, I was in the second grade and it was Easter. My mom and I made Rice Krispy Treats, only we shaped them into little bowl-shapes to be nests. We added jelly beans and voila! Edible bird’s nests, perfect for an elementary school party. And the kids, well…they loved me. For that one day I was the most popular kid in my class. Food, I realized, can have a powerful effect on people.
