Today’s recipe is a simple, but delicious, tomato soup. We added some grilled cheese sandwiches, but this soup would also be great with a green salad. It’s easy, healthy, and a great choice for quick meatless meal.

The truth is, short of being a professional baker or Martha Stewart, no one else probably owns a bunch of specialty and seasonal cake pans. These pans produce really whimsical cakes, and they typically come with a recipe because they require a sturdy cake, almost like a pound cake (and typically 5-10 cups of batter). So the typical box mix won’t do, add gluten-free to the requirements and you have a recipe for disaster. So I have had to adapt my old recipes to work in these shaped pans.

I really appreciate Jamie Oliver’s passion for improving the school lunch program. Every day millions of kids eat their breakfast and lunches at school, many thanks to the free or reduced cost program. I know for some children the meals at school are the only meals they get.

I keep seeing all these spaghetti with bacon recipes, and my family loves bacon, so I finally decided to give it a try.

Honestly, bacon in my red sauce doesn’t sound all the great to me, but I was pleasantly surprised with the results.

It’s no secret my mom has serious sweet tooth. So growing up I was privy to my share of sweet treats, especially cookies. Coming home from school in the afternoons to a house that smelled like a bakery is indeed a good thing. Let’s face it, few things make a better after school snack than warm chocolate chip cookies and a glass of milk!

So chocolate chip cookies was definitely high on my list of comfort foods I worried about making gluten-free.

Brownies a la mode

My kids wanted brownies the other day and let’s just say gluten-free, egg-free brownies haven’t been real successful at my house. So it wasn’t with great enthusiasm I attempted them yet again. But what can I say, for my kids I gave it another try.

For this brownie attempt I merged a vegan recipe with a gluten-free recipe and the result was a very nice brownie.
